Isidoro, a 51-year-old small farmer and his wife Maria Cruz Pineda have been producing coffee for 25 years in the area of Santa Helena, in the community of Aguanqueterique. They formed a family with 10 kids to whom they share all their knowledge about this cropping. With their unique process, they achieve a special coffee; they harvest the cherry, choosing the best grains to continue with the pulping process giving it one day of fermentation. It is washed with mountain water to let it dry one day in the yard, finalizing this process in the solar dryer.
